Recipe: No Bake Energy Bites

Sweets are one of those things I have yet to get a handle on in life. A "food mentor" recently told me to try not to have sugar and carbs past 2pm. While I don't always follow through with that, it's really been helpful in controlling my "bad food" intake. And it means I still get to eat some sweets! I try to eat all my "big meals" and sugar before 2pm so I have the rest of the day to burn it off.

I found this No-Bake Energy Bites Recipe on Pinterest. It was easy to make and the little bites are so delicious! This is way better than eating gobs of cookie dough. Just a couple of these satiate that desire for baked goods (even though these aren't baked!).

No-Bake Energy Bites
Ingredients:
 
1 cup (dry) oatmeal (I used old-fashioned oats)
1 cup toasted coconut flakes
1/2 cup peanut butter
1/2 cup ground flaxseed or wheat germ
1/2 cup chocolate chips (optional)
1/2 cup honey
1 tsp. vanilla

Method:
Stir all ingredients together in a medium bowl until thoroughly mixed. Let chill in the refrigerator for half an hour. Once chilled, roll into balls of whatever size you would like, or about 1 inch diameter. Store in an airtight container and keep refrigerated for up to 1 week.

Makes about 20-25 balls.
Mindy's Tip:
Omit chocolate chips and use all-natural sugar free peanut butter to make this snack even healthier.
Toast the coconut by preheating oven to 350 F; spread coconut on a baking pan; bake 5 mins then re-spread it out. Then another 5-10 mins.

haha, i seen the original article a few days ago. immediately ran out to buy the ingredients and made them the same day. LOL. I loved them, but next time I think i'll substitute something else for the coconut, it didn't sit well on my tummy. But they tasted GREAT and Adelyn LOVED them.
