Shawn's favorite soup is tomato, yet I've never made it other than out of a Campbell's can (gasp!).
When I stumbled across this Creamy Tomato Soup recipe in an old issue of Simple & Delicious, I knew it'd be worth a try. It's not as "from scratch" as it could be, but it's still so rich and yummy!
Here's what you need:
1 can (29 oz) tomato sauce
1 cup heavy whipping cream
1-1/2 tsp brown sugar
1 tsp Italian seasoning
1/4 tsp salt
1/8 tsp white pepper
dash hot pepper sauce
salad croutons, shredded cheddar cheese, quartered grape tomatoes
and/or thinly sliced green onions
In
a large saucepan, combine the first seven ingredients. Cook and stir
over medium heat until heated through (do not boil). Garnish with
croutons, cheese, tomatoes, and/or onions. Yield: 4 servings
If you decide to try it, let me know how you like it! I thought the heavy whipping cream made it pretty rich, so, a little goes a long way. :)

Homemade tomato soup with grilled cheese is one of my favorite lunches to make, especially on a cooler day! :) Takes just a little more effort than popping open a can, but so worth it.
I love tomato soup! I'm gonna have to try this one!
